From January 1, 2027, all new commercial buildings in Victoria must go fully electric—and that includes cafes and restaurants.
Industry leaders, including the Australian Restaurant & Café Association, are raising concerns:
💬 “This policy is being pushed without proper infrastructure or support for small hospitality businesses. It’s going to drive up costs and limit options for chefs and venues.”
Gas cooktops have long been a staple in professional kitchens. This change could mean a fundamental shift in how new restaurants operate.
